Easy Cheesy Bacon Bites

Ingredients:
1 loaf Sweet Hawaiian or brioche bread
12 ounces Rock House Creamery Fresh Chevre **
1 1/2 cups green onion, chopped
1 pound Farmview Market Housemade Bacon, regular thickness
Directions:
- Preheat your oven to 400oF and line a baking sheet with aluminum foil.
- On a separate plate, spoon a thin layer of crumbled chevre cheese on each slice of bread. Sprinkle 1/2 tsp of green onion on top of the cheese.
- Cut the crusts off of your bread.
- Starting at one end of your bread slice, roll each slice of bread into a tight cylinder. Wrap a slice of uncooked bacon around each cylinder, spiraling to cover the whole piece of bread. Using kitchen shears, cut each cylinder in half.
- Place on baking sheet and bake until crispy and bacon is cooked through, about 20-30 minutes.
** As an alternative to Rock House Creamery Fresh Chevre and chopped green onion, you may substitute Rock House Creamery Tomato, Basil and Garlic Fresh Chevre or Pear and Cardamom Fresh Chevre. This will add a bit more dimension in the flavor profile of your bacon bites!
