Grilled Oysters with Garlic Butter

Ingredients:

  • 24 fresh East Coast oysters
  • 1/2 cup butter, melted
  • 3 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • Lemon wedges (for serving)

Instructions:

  1. Preheat your grill to medium-high heat.
  2. In a small bowl, mix the melted butter, garlic, parsley, salt, and pepper.
  3. Shuck the oysters, keeping them on the half shell.
  4. Place the oysters on the grill. Spoon a small amount of garlic butter onto each oyster.
  5. Grill for about 5-7 minutes, until the oysters are cooked and the butter is bubbly.

Oyster Cornbread Stuffing

Ingredients:

  • 1 pan cornbread, crumbled (We prefer this recipe, made with Rock House Farm Stone Ground Grits.)
  • 1/2 loaf French bread, cubed and toasted
  • 2 dozen fresh East Coast oysters, shucked and chopped
  • 1/2 cup butter
  • 1 large onion, chopped
  • 3 celery stalks, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 2 tsp fresh thyme, chopped
  • 2 tsp fresh sage, chopped
  • 1 tsp salt
  • 1 tsp black pepper

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, melt the butter over medium heat. Add the onion, celery, bell pepper, and garlic, sauté until softened.
  3. In a large bowl, combine the cornbread, French bread, and sautéed vegetables.
  4. Stir in the chicken broth, thyme, sage, salt, and pepper.
  5. Gently fold in the chopped oysters.
  6. Transfer the mixture to a greased baking dish.
  7. Bake for 30-35 minutes, until the top is golden and the stuffing is heated through.

Maple-Glazed Scottish Salmon

Ingredients:

  • 4 fillets of Scottish salmon
  • 1/4 cup pure maple syrup
  • 2 tbsp soy sauce
  • 1 tbsp Dijon mustard
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Lemon wedges (for serving)

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, whisk together the maple syrup, soy sauce, Dijon mustard, olive oil, salt, and pepper.
  3. Place the salmon fillets on a baking sheet lined with parchment paper. Brush the glaze generously over the salmon.
  4. Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

Smoked Salmon Dip

Ingredients:

  • 8 oz smoked salmon, chopped
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 tablespoon lemon juice (freshly squeezed)
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 2 tablespoons capers, drained and chopped
  • 2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)
  • Optional: lemon wedges and additional dill for garnish

Instructions:

  1. In a mixing bowl, combine the softened cream cheese, sour cream, mayonnaise, lemon juice, Dijon mustard, garlic powder, onion powder, and black pepper. Use a hand mixer or spatula to blend until smooth and creamy.
