Watermelon Salsa
Whether paired with crisp tortilla chips or used as a tantalizing topping for fish or chicken tacos, this Watermelon Salsa is a must-have for your summer gatherings. Bursting with juicy watermelon, succulent peaches, crisp cucumber, and a hint of jalapeno heat, this salsa is the perfect mix of sweet and savory!
Ingredients:
- 1 1/2 tsp lime zest (about 1 lime)
- 1/4 cup fresh lime juice (about 4 limes)
- 1 tbsp sugar
- 3 cups watermelon, seeded & ¼” diced
- 1 cup peaches, ¼” diced
- 1 cup cucumber, ¼” diced
- 1 jalapeno pepper, seeded & minced
- 1/2 cup red onion, finely chopped
- 2 tbsp fresh basil, finely chopped
- 1/2 tsp fresh garlic, minced
- Pink himalayan salt, to taste
Directions:
- In a large bowl, stir together the lime juice, lime zest, and sugar.
- Add the watermelon, peaches, cucumber, jalapeno, red onion, fresh basil, and garlic. Toss gently.
- Chill salsa for at least 30 minutes to let the flavors meld.
- Just prior to service, lightly sprinkle with Pink Himalayan salt, if desired.
- Serve with chips or as a topping for fish or chicken tacos.
