Ingredients:

  • 2 cups extra virgin olive oil
  • 6 whole garlic cloves, peeled
  • 1 tablespoon dried chili flakes

Instructions:

  1. Combine the garlic cloves and chili flakes in a saucepan with the olive oil.
  2. Heat gently over low heat for about 30 minutes, ensuring it does not boil.
  3. Remove from heat and let it cool completely.
  4. Strain the oil into a decorative bottle, discarding the solids.

Cranberry-Orange Jam

Ingredients:

Instructions:

  1. Rinse the cranberries and remove any stems or damaged berries. Zest the orange and then juice it, setting both aside.
  2. In a large saucepan, combine the cranberries, orange zest, orange juice, sugar, water, and ground cinnamon (if using).
  3. Bring the mixture to a boil over medium heat, stirring frequently. Once it reaches a boil, reduce the heat to low and let it simmer for about 15-20 minutes, until the cranberries burst and soften.
  4. Use a potato masher or fork to mash the cranberries to your desired consistency. If you prefer a smoother jam, you can use an immersion blender for a few seconds.
  5. To test the consistency, place a small amount of the jam on a cold plate and let it sit for a minute. Run your finger through it; if it holds its shape, it’s ready for canning. If it’s still runny, continue simmering for a few more minutes and test again.
  6. Pour the hot jam into sterilized jars, leaving about 1/4 inch of headspace. Wipe the rims of the jars with a clean cloth to remove any residue.
  7. Seal the jars with lids and bands, tightening them just until snug.
  8. If you plan to store the jam for an extended period, process the jars in a boiling water bath for 5-10 minutes to ensure they seal properly.
  9. Remove the jars and let them cool completely on a clean kitchen towel or wire rack.
  10. Once cooled, check the seals. The centers of the lids should be depressed and not flex when pressed. Store any unsealed jars in the refrigerator and use within a few weeks. Sealed jars can be stored in a cool, dark place for up to a year.
