Ingredients:
1 tbsp Extra Virgin Olive Oil
2 1/2 cups corned beef (fat trimmed), small diced
2 Tbsp. Butter, unsalted
2 Cloves of garlic, minced
1 Medium sweet onion, small diced
5 Large Idaho potatoes, peeled and cut into ¼” cubes
Salt and pepper to taste
Directions:
- Preheat large cast iron skillet on medium-high heat and add oil.
- Add corned beef and cook 8-10 minutes. Remove from pan.
- Reduce heat to medium and add butter, garlic, and onion, and sauté until translucent, about 6-8 minutes.
- Add potatoes and cook approximately 15 minutes, until fork tender and golden brown.
- Add corned beef back to skillet. Mix thoroughly to heat through. Season to taste.
