Ingredients:

8 ounces Ziti pasta cooked al dente

1 pound fresh spinach

1 cup chopped grape tomatoes

1 can cream of mushroom soup

1 clove garlic, minced

1 tsp dried Italian seasoning

1/4 a cup of canola oil

1 tsp kosher or sea salt

1 tsp pepper

1 pound Rock House Farm Italian Sausage (casing removed if not bulk)

1 large onion, chopped

1 egg, slightly beaten

16 ounces Rock House Creamery Odessa Cheese

1 ½ cups grated Rock House Creamery Nanny Moon’s Gouda

1/3 cup fresh parsley, chopped

Directions:

  • Preheat the oven to 375°F.
  • Place cooked pasta into a lightly greased 13”x 9” pan.
  • In a large pot, add 1 cup of water and 1 pound of spinach, then cover and cook for 3 -4 minutes, stirring occasionally, until wilted. Using a colander, drain spinach completely.
  • Combine spinach, soup, tomatoes, garlic, Italian seasoning, salt and pepper and spoon over the cooked pasta.
  • Cook and break up sausage into small pieces in a large skillet over medium heat until sausage is browned. Drain oil from the pan. Sprinkle the cooked sausage over the spinach mixture. In the same pan sauté chopped onion until cooked and sprinkle over sausage.
  • Combine egg and Odessa cheese. Spoon and spread over sausage mixture.
  • Sprinkle with shredded cheese.
  • Bake at 375oF for 35-40 minutes. Sprinkle the top of the casserole with parsley before serving.
  • Serve & enjoy!

** This dish may be put together overnight and stored, covered, in the refrigerator. If cooking from refrigerator temperatures, add 10-15 minutes of bake time to ensure the product is heated thoroughly.**
