Sweet Potato Casserole

Ingredients:
6 medium sweet potatoes
1 1/2 sticks of butter, room temperature
2 large Southern Swiss eggs
1 1/2 tsp vanilla extract
1 cup brown sugar
1/2 cup Southern Swiss Heavy Cream
1 tsp cinnamon
Salt and pepper, to taste
Directions:
- Preheat oven to 425 degrees F.
- Wrap the sweet potatoes in foil and roast for 45-50 minutes, until soft.
- Allow potatoes to cool. Once cooled, peel and mash the potatoes until smooth.
- Set oven temperature to 350 degrees F.
- In a medium bowl, mix the butter, eggs, brown sugar, vanilla extract, cream, salt, pepper, and cinnamon until smooth.
- Combine mixture with the mashed potatoes.
- Pour mixture into a casserole dish and bake for 30-40 minutes.
- Optional: Top with marshmallows and/or pecans after the baking period is over. Return to oven and broil for 3-4 minutes intil marshmallows have browned.
