It’s Pumpkin Time!

The time you have been waiting for is finally here.  Though the thermostat and calendar may be telling you that it’s still summer, it is, in fact, Pre-Fall; the time when pumpkin-spiced everything starts to hit store shelves.

Never in the history of time, has a flavor been so polarizing.  Well, maybe black licorice.  For those who have been counting the days until they could get their Pumpkin Spiced Latte fix at Starbucks and those whose eyes will roll through the season of pumpkin-spiced dog treats, pumpkin-spiced pop tarts, and pumpkin-spiced applesauce, pumpkin time is upon us.

Back to Basics Pumpkin Muffin Homemade Baking Mix

When this family-owned business talks about getting “back to basics,” they mean processing wheat the way their ancestors did, on the same land they’ve been farming for over a century.  They use a stone mill to grind their Georgia Grown wheat into healthy and delicious, minimally processed “whole wheat” flour, which makes this mix not only delicious, but nutritious as well.  Add oil, egg and pumpkin to make the basic mix, or use it to make this recipe which also incorporates a cream cheese frosting, which is never a bad thing to do.

Self-Frosted Pumpkin Muffins

Ingredients:

Directions:

Using a hand mixer, whip the cream cheese, sugar, egg yolk and vanilla.

Prepare Pumpkin Muffin Mix per label instructions.

Put a tablespoon of the cream cheese mixture in the center of the muffin batter (per muffin cup).

Using a toothpick, incorporate the cream cheese into the mix in each muffin cup.

Bake according to the directions on the mix.

Iced Pumpkin Cake

Ingredients:

Directions:

Heat oven to 350 degrees.

Beat together the eggs, pumpkin, sugar and oil until well blended.  Add the flour, baking powder, baking soda, salt, cinnamon, and the ginger or nutmeg. Mix until smooth, then spread the batter into an ungreased 10” x 15” baking pan (or, for a fluffier version, a 9” x 13” pan).

Bake for 25-35 minutes, or until a toothpick inserted into the center comes out clean.  Allow to cool.

For the frosting, beat together the cream cheese, butter, and vanilla extract until light and fluffy.  Add the confectioners sugar and beat until smooth.

Once the cake has cooled, spread the frosting over the cake and cut into 24 squares.
