Georgia’s Home for Everything Local
The popularity of artisan-made goods signals our increasing desire for quality over quantity, which has fueled a resurgence in age-old professions— like butchering fresh meats. Farmview Market offers one of a relatively small number of full-service, traditional butcher shops in Georgia. Take a peek into the life of our artisanal butcher shop, and discover why our meat selections are a cut above the rest.
Farmview Butcher, Glen Wellman, and his team are passionate about the proteins Farmview sources and the art of butchering.
Farmview Market’s Journeyman Butcher, Glen Wellman
Our butcher team breaks down whole animals to fill the awe-inspiring meat case you see when you first enter the market. All Farmview meats are hormone-free and steroid-free, and are said to have the best flavor by many of our customers.
Glen has been a butcher since he was 16 years old, when he started in a slaughter house for a summer job.
“Our butchered meat selections take about two days to reach our butcher shop after they leave the farm,” said Wellman. “Once we receive them, they are hung and dry aged for a minimum of two weeks. Dry aging allows the natural enzymes in the meat to break down the muscle tissue, resulting in improved texture and flavor. Therefore, our process guarantees the freshest, most flavorful cut of meat that you can find in the area!”
And, the Farmview butchers LOVE special requests.
“Really, ask us for anything! If you want something give us a call and we’ll make it happen,” said Wellman.
A new service Farmview is offering is its housemade marinade, which you can sample in store. We can marinate and pack your meat before you leave so it’s ready to cook and enjoy when you reach your destination.
Some of the Farmview butcher shop farm suppliers include Rock House Farm in Leesburg, Georgia, The Boy and the Dog in Rutledge, Georgia, Springer Mountain Farms in Blue Ridge, Georgia, and Heritage Farms Cheshire Pork in Goldsboro, North Carolina.
In addition to fresh cuts of beef, pork, and chicken and lamb, the Farmview Market artisanal butcher makes a large variety of house smoked sausage like Chorizo, German Sausage, Hot Breakfast Links, Andouille, and lots more. Farmview also has its own fresh, beef jerky in a variety of flavors such as sriracha and jalapeno. Farmview’s jerky is natural with so few preservatives, it must be refrigerated.
The Farmview Butcher Shop also carries fresh seafood and ready-to-cook entrée items like stuffed chicken, handmade burgers, meatloaf and more. Each week, the market offers butcher specials that run Thursday through Wednesday. You can find out What’s Fresh from the butcher shop here.
