Here in the south, we love our football almost as much as we love a good party. Football season is back and we could not wait another week! Hot dogs and hamburgers might cut it for the pre-season, but by next week, you had better have your game plan together. When planning your tailgate menu, remember that some of us spend more time watching The Food Network than ESPN and, let’s face it, we could care less about the football; we come for the food and friends.
The number of foods to serve is endless, and everyone has their favorites. You might not be surprised to learn that the most popular tailgating food as ranked by college students across the country are:
So give the people what they want! Wings and dip and lots of other stuff, as well. But whether you’re a season-ticket holder or just plan to spend hours with friends who are yelling at the television, you need to mix it up a bit. These recipes will give you a few twists on some old favorites and keep you from getting sidelined.
In this wing recipe, the heat comes from Korean gochujang instead of hot wing sauce. The fact that the wings are baked instead of fried keeps them light, but still full of flavor.
Whisk the ketchup with the vinegar, soy sauce, honey and gochujang and bring to a boil. Cook over moderate heat, stirring occasionally until thickened and reduced to 1 cup (about 15 minutes).
Toss wings with canola oil and season with salt and pepper. Bake wings at 325 degrees until browned and cooked through (about 30 minutes).
Increase oven temperature to 450 degrees and discard juices from the baking pans.
Toss wings with the gochujang sauce in a clean bowl, and arrange in a single layer on each baking sheet. Bake until glazed and lightly charred in spots. About 10-15 minutes.
You don’t naturally think of dip for dessert, but this sweet creamy dip is a crowd favorite.
Mix together cream cheese, butter, powdered sugar, vanilla and brown sugar with an electric mixer. Stir in chocolate chips.
Serve with your favorite combination of salty and sweet dippers like graham crackers, pretzel crisps and apples.
Don’t get weighed down, try this light and refreshing watermelon drink.
Combine 4 cups of the watermelon cubes and 1/2 cup of the water in a blender and puree. Press the mixture through a sieve set over a medium bowl. Pour into a large pitcher. Repeat with the remaining watermelon and water.
Add the sugar and lime juice to the pitcher; stir until the sugar is dissolved.
